Apricot Bites

700g dried apricots

1 tin condensed milk

Juice of 1 large lemon

5 tablespoons dessicated or shredded coconut

150g gluten-free Butterfingers biscuits

  1. In a food processor, finely chop apricots and set aside in a large bowl

  2. Place condensed milk, lemon juice, coconut and biscuits in a food processor and combine well

  3. Add condensed milk mixture to apricots and stir through

  4. Using a teaspoon, spoon mixture and roll into balls

  5. Place into a bowl containing extra coconut to coat each ball

  6. Store in an airtight container in the fridge


  • Substitute apricots with sultanas or dates and nuts

  • Add chocolate chips to final mixture instead of 5 tablespoons of coconut

  • Roll in chocolate dollars
